Lutefisk, originally a Scandinavian delicacy, has been imported and popularized as a Christmas tradition in the U.S. involving dried fish and lye.

In any event it was invented during the Viking era. It started with drying the fish to preserve it. First they built racks from birch tree branches, and set them on top of the cliffs facing the North Sea. The history of lutefisk dates back to the Vikings. On one occasion, according to one legend, plundering Vikings burned down a fishing village, including the wooden racks with drying cod.

Lutefisk Suppers Today. My Lena makes the best darn lefsa in Minnesota. Corse I have to help otherwise she’d eat it all up while she was cooking it and we would not have any for supper that evening…. Lutefisk (Norwegian, pronounced [ˈlʉ̂ːtfɛsk] in Northern and parts of Central Norway, [ˈlʉ̂ːtəˌfɪsk] in Southern Norway, Swedish lutfiskpronounced [ˈlʉ̂ːtfɪsk]; Finnish: lipeäkala [ˈlipeæˌkɑlɑ]) is dried whitefish (normally cod, but ling and burbot are also used). Lutefisk prepared from cod is somewhat notorious, even in Scandinavia, for its intensely offensive odor. Conversely, lutefisk prepared from pollock or haddock emits almost no odor. The taste of well-prepared lutefisk is very mild, and often the white sauce is spiced with pepper or other strong tasting spices.
